  • chopped pistachios or other nuts (optional)

Instructions:

1. Melt the chocolate in a glass bowl (set over a pan of simmering water). Add the pureed avocado, coconut milk, vanilla extract, salt and sugar and mix until completely smooth. If using nuts, add and stir into the mixture.

2.Pour the mixture into an 8-by-8-inch baking pan (lined with parchment paper).

3. Refrigerate until firm. The recommended time is at least 2 hours, but preferably overnight so that it gets firmer.

4. Lift the fudge out of the pan using the parchment paper. Remove the paper and then cut into your desired size (ideally 1 inch). The fudge may be stored in a refrigerator. Make sure to use an air-tight container.

You may also try to use other ingredients such as mint to add flavors to this dessert. The nuts can also provide an added flavor and texture to your avocado fudge.

4. No-Bake Avocado Cheesecake

This is an easy avocado cheesecake recipe that you can try. As this is a no-bake recipe, you wouldn’t need an oven; your refrigerator will be enough to help you make this treat.

Ingredients:

  • 9 oz graham crackers or 1 cup crushed graham
  • 100 grams unsalted butter, melted
  • 300 grams of cream cheese
  • 1 pc avocado
  • 200 ml whipped cream
  • 1 can coconut cream
  • 1 cup white sugar
  • 2 pcs lime, juiced

Instructions:

1. Put the graham crackers and ÂĽ sugar in a food processor until finely ground. Add melted butter and process again until the crumbs are moist.

2. Press the mixture into the bottom of a pan. Refrigerate for about 10 minutes to set.

3. Cut the avocado into cubes and put them in the food processor along with the cream cheese, lime juice, and remaining sugar. Process until completely smooth. Add the whipped cream and coconut cream and process again until completely blended and the mixture starts to thicken.

4. Pour the avocado cream cheese mixture on top of the crust. Refrigerate until set. (It is recommended to let it sit in the freezer for 6 hours or overnight so that it can completely set).

5. Garnish with whipped cream and/or lime slices, if preferred.

Crushed graham or graham grounds are also now readily available at supermarkets.
