Broccoli cheesy bread

INGREDIENTS
- 3 cups of broccoli (riced)
- One large egg
- 1/2 c. of shredded mozzarella cheese
- 1/4 c. newly grated Parmesan cheese
- garlic (2 cloves and minced)
- 1/2 tsp. of dried oregano
- Kosher salt (small amount)
- Ground black pepper
- Pinch of red pepper flakes
- 2 tsp. freshly chopped parsley
- Marinara sauce
HOW TO COOK
1- Heat the oven to 425° — Line a large baking pan with parchment paper. Then take the riced broccoli for 1 minute to steam in the Microwave. Then remove the extra moisture by ringing-out the broccoli with a paper towel or cheesecloth.
2- Place the broccoli to a large bowl. Mix the egg, 1 cup of mozzarella, Parmesan, and garlic. Flavor with oregano, salt, and pepper and mix. Then put the mixture to a baking pan and shape into a thin and round crust.
3- Bake in the oven for 20 minutes until golden and dried out. Take it out and top the remaining 1/2 cup mozzarella then put back to the oven for ten more minutes to bake until cheese is melted and become crust and crispy.
4- Remove from the oven, garnish with parsley and pepper flakes and ready to serve warm with marinara sauce.
Zucchini grilled cheese

INGREDIENTS
- 2 cups of zucchini (grated)
- One large egg
- 1/2 c. Parmesan cheese (fresh, grated)
- Two onions (green, thinly sliced)
- 1/4 cup of cornstarch
- kosher salt (small amount)
- Freshly ground black pepper
- Vegetable oil, for cooking
- 2 cups of shredded Cheddar
HOW TO COOK
1- Squeeze the extra moisture out of zucchini with a clean kitchen towel. In a medium dish, mix the dried- zucchini with egg, parmesan, green onions and cornstarch and season with salt and pepper.
2- Pour some vegetable oil to the pan enough to fry. Scoop 1/4 cup of the zucchini mixture, shape them into a patty of small squares or circles, then fry.
3- Cook to about 4 minutes until lightly golden on both sides and drain with paper towels. Clean the skillet with a clean cloth.
4- Now, for the best part, place the two cooked zucchini patties in the same pan on medium heat. Top them shredded cheese and place two remaining zucchini patties on top (forming like sandwiches)
5- Heat for about 2 minutes until the cheese has melted. Ready to plate in and serve.
Ham egg & cheese roll-ups

INGREDIENTS
- Ten eggs
- 2 tsp. garlic powder
- kosher salt (small amount)
- Freshly ground black pepper (small amount)
- 2 tbsp. butter
- 1 1/2 c. shredded Cheddar
- 1 cup baby spinach
- 1 cup chopped tomatoes
- 20 slices ham
HOW TO COOK
1- Heat the broiler. In a large bowl, crack the eggs and whisk adding the garlic powder and season with salt and pepper.
2- Take a nonstick skillet over medium heat and start melting the butter. Add the eggs, scramble and stir in the cheddar cheese until melted. Add and stir in the baby spinach and tomatoes until combined.
3- Place the two slices of ham in a cutting board. Top them with the spoonful of the scrambled-egg-mixture and roll-up.
4- Place the roll-up hams in a shallow baking pan. Broil for 5 minutes until ham becomes crisp. Take out and let it rest for a while then serve and enjoy a new comforting food.
Broccoli-crust pizza
Total time of cooking: 50 minutes
INGREDIENTS
- One large head broccoli, chopped and steamed
- One large egg, lightly beaten
- 2 c. shredded mozzarella, divided
- 1/2 c. Parmesan, divided
- 1/2 tsp. garlic powder
- Kosher salt (small amount)
- Freshly ground black pepper (small amount)
- Marinara sauce
- 1/4 c. pepperoni
- Fresh basil, for serving
HOW TO COOK
1- Preheat the oven to 425 degrees F.
2- Pulse the steamed broccoli into a food processor until grated. Squeeze water out with a clean cloth and transfer the dried broccoli to a large bowl. Add the beaten egg, 1 cup mozzarella, and ¼ cup Parmesan with garlic powder, salt, and pepper.
3- Put the dough to a parchment-lined, greased baking sheet by shaping them into a thin, round crust. Bake in 20 minutes until golden and dried out
4- Top with marinara sauce and the remaining cheese and pepperoni. Bake back to the oven for 10 minutes until cheese is melted and crust is crispy. Garnish with basil and ready to serve.
Ground turkey bolognese

INGREDIENTS
- 1 lb. angel hair pasta
- 1 tbsp. extra-virgin olive oil
- One large onion, chopped
- One large carrot, peeled and chopped
- One celery stalk, chopped
- Three cloves garlic, minced
- 1 lb. ground turkey
- kosher salt
- Freshly ground black pepper
- One 28-ounce can crushed tomatoes
- 1/2 c. dry white or red wine
- 1/4 c. freshly chopped parsley, plus more for garnish

HOW TO COOK
1- In a cooking pot of salted boiling water, cook angel hair pasta according to package directions. When in al dente, drain and return to pot.
2- The bolognese: In a large pan or pot heat oil at medium heat. Add the onions, carrots, celery, and garlic for 5 minutes until tender. Add the ground turkey and cook for 5 minutes more. Season with salt and pepper and add the crushed tomatoes, wine, parsley, and dried oregano.
3- Simmer for 10-15 minutes until thickened. Then chuck cooked angel hair pasta. Garnish with Parmesan and parsley and ready to serve.
