Slow cookers are an amazing kitchen tool that helps you create delicious meals with only minimal preparations making it a great time saver and an excellent option for busy moms. Slow cooking is also a great way for you to get out of the nutritional flavors from your main dishes such as chicken, pork, and beef. In this article, we’ll show you different slow cooking recipes that you can introduce to your kids.
1. Chicken and corn hot-pot
This is a chicken dish that is full of flavors in one pot-meal for kids. It is easy to make, you’ll just need to incorporate all the ingredients in one pot. You’ll experience its rich flavors within 2 hours.
Ingredients:
- 1 kg chicken drumsticks or thighs
- 1/2 cup plain flour
- 1 tsp paprika
- 1/2 tsp turmeric
- 1 tsp fennel seeds
- 3 cloves garlic
- ½ cup butter
- 1 head green cabbage, shredded
- 2 cobs of large corn, cut into 4 each
- ½ cup of water
- Salt and pepper
Directions:
Step 1: Preheat the oven to 180°C. In a bowl, combine the turmeric, salt, pepper, and paprika then spray the roasting tray with it. Using the flour mixture, roll the chicken pieces and place it into the roasting tray.
Step 2: Sprinkle chicken with minced garlic and cover it with shredded cabbage and sprinkle it with salt, pepper and fennel seeds all over it. Add the water, corn, and butter.
Step 3: Cover the tray with foil and let it slow cook for about 1 ½-2 hours.
2. Slow-cooked chicken drumsticks in BBQ sauce
Chicken and barbecue are popular choices for the kids and the whole family. Why not incorporate these two favorites into one dish? The chicken as a main dish and the barbecue as the sauce. Since it is in slow-cooking, the chicken will surely melt in your mouth.
Ingredients:
- ½ cup butter
- 1 onion (finely diced)
- 2 finely chopped celery stalks
- 2 crushed cloves garlic
- 1 ½ up Beef Style Liquid Stock
- ½ cup apple cider vinegar
- 4 tbsp Worcestershire sauce
- 2 tbsp mustard
- 2 ½ tbsp honey
- 2 tsp paprika; for marinate and main cooking
- Chicken drumstick
- ¼ vegetable oil
- Salt and pepper
Directions:
Step 1: The first step is to make the barbecue sauce. Saute the garlic, onions, and celery in the butter until the onion is cooked and becomes translucent.
Step 2: Add the apple cider vinegar and the beef stock. When it boiled, add the other ingredients such as mustard, Worcestershire and the honey. Simmer for about 15 minutes and set aside.
Step 3: Combine flour, paprika, salt, and pepper and place it into a ziplock bag. Add the chicken pieces in the flour mixture, close the ziplock and shake each chicken to evenly coat it with flour without any excess flour.
Step 4: Place the chicken with flour in the slow cooker. Place the sauce all over it and close the lid. You can set it into the high setting for 3-4 hours cooking and in the low cooking for about 6-7 hours.
3. Slow cooker shredded beef nachos
This is a great snack that your kids will enjoy during their weekend movie time. It is a beef topping that is cooked in a slow cooker to bring out its rich flavor.
Ingredients:
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1 tsp salt and pepper
- 3 crushed garlic clove (crushed) and 1 onion diced
- 1 ½ kg ground beef steak
- 1 cup Chicken Style Liquid Stock
- 2 tsp olive oil
- 2 cups grated cheese
- 2 avocados
- 1 lime juice
For the Salsa:
- 3 diced and medium tomatoes
- 1/2 diced white onion (diced)
- 1/2 diced garlic clove (diced)
- 1 tbsp olive oil
- 2 tsp chopped coriander
Directions:
Step 1: In a small bowl, mix the crushed garlic all over the beef and place it in the slow cooker with the chicken stock to be cooked for about 3-4 hours on high setting cooking and in the low cooking for about 6-7 hours.
Step 2: If the ground beef is tender, you can now saute it in garlic and onion. Pour the leftover chicken stock and cook it until the liquid evaporates.
Step 3: To create simple guacamole, just mash the avocado and pour in lime. To make the salsa, combine the other ingredients such as tomatoes, white onion, garlic, olive oil, and coriander.
Step 4: Layer the corn chips into a baking tray with baking paper. Sprinkle the chips with cheese and beef. Place it in a 220°C pre-heated oven for 10 minutes or until the cheese melts.
Step 5: Top it with the salsa and guacamole.
4. Slow cooker bacon baked beans
This slow-cooked dish is a combination of smoky flavors making it a new favorite for your kids. It can be a good meal whether for breakfast, lunch or dinner.
Ingredients:
- 1 cup dried white beans, dried
- 500 g bacon or speck
- 1 diced medium onion
- 4 sliced garlic cloves
- 1 can or fresh diced tomato
- 4 cups liquid chicken stock
Directions:
Step 1: Soak the white beans in cold water, covered and leave it overnight for it to soften.
Step 2: Fry the bacon or specs until all the edges turn brown. Drain the beans. Place the cooked bacon or speck in the slow cooker together with the beans, tomatoes, garlic, onions and chicken stock. Cook it over a high setting for 4-6 hours and a high setting for about 6-8 hours. You may need to check it from time to time to ensure that it is not drying out.
Step 3: You may serve it with a fried egg on the side of chopped parsley.
5. Slow cooker pork roast
This dish is made from simple ingredients that have overflowing rich flavors from different spices that compliment each other.
Ingredients:
- 1 can Orange or Cola drink
- 1 cup banana ketchup
- 2 ½ Brown sugar
- ¼ cup apple cider vinegar
- 1 tbsp Worcestershire sauce
- Tbsp hot sauce
- 1 ½ apricot jam
- 4 broccoli flowers
- 4 cups of water
- 1kg pork loin
Directions:
Step 1: Saute onions and garlic in a frying pan and set aside.
Step 2: Place the pork loin in the slow cooker. Mix the other ingredients such as ketchup, cola, and brown sugar.
Step 3: Stir in the Worcestershire sauce, apricot jam, hot pepper sauce, and apple cider vinegar in a bowl and slowly pour it over the roast.
Step 4: Add the sauteed onions and garlic. Cook it for over 2 hours. Place the broccoli flowers in a microwavable dish and let it stand for about 3 minutes. When the pork roast is ready, top it with broccoli flowers.
